South Indian Kanji: Kanji is traditionally prepared in South India. Kanji is a very healthy and nutrient -rich dish. It is mainly made with rice, lentils, and sometimes with vegetables or coconut to its choice. Kanji is not only a light food for the stomach but it is also considered very beneficial for digestion. Especially for sick person, elderly or children, it is considered a good food.
This easily digested food gives a lot of rest to the stomach. Kanji helps a lot in keeping our body hydrated. It is very beneficial in the summer season because it provides coolness to the body and eliminates fatigue. When elements like curry leaves and coconut are found in Kanji, it becomes even more nutritious, because all of them also have antioxidants and anti-inflammatory properties.
Kanji gives relief to a great extent in problems like constipation, acidity and indigestion.
White rice 1 bowl
Moong dal – 3 tablespoons
Water – 7 to 8 bowls
salt to taste
Black Pepper – Half a teaspoon
Cumin – 1 teaspoon
Finely chopped onion – 2
Green chili – 2 finely chopped
Curry Leaf -10 -12 leaves
Asafoetida – half a teaspoon
Ghee/coconut oil – 2 tablespoons
Grated coconut – 3 tablespoons
Brapped ginger – 2 teaspoons
Wash rice and lentils thoroughly. Some people use only rice in Kanji, while some also add a little moong dal to it, it is completely above your taste, although using lentils makes it more nutritious and delicious.
Put rice and lentils in the cooker and add 6 to 7 cups of water to it and add a little salt. Now cook it on medium heat till 4-5 whistles come. If you want, you can also cook it in an open vessel, keep its flame light to cook in an open pot so that the rice becomes well soft.
After cooking, mash the rice lightly so that it becomes a thick soup -like texture. If you want, you can also dilute it by adding some more water.
Keep this rice and lentil mixtures fed throughout the night.
Heat ghee or coconut oil in a deep and small pan. Now add ginger, cumin, curry leaves, black pepper, and asafoetida. According to your choice, if you want, you can also add finely chopped onion and green chillies. For this, fry the onion till it becomes light golden.
Mix the prepared tempering in the boiled kanji and cook on low flame for 5 minutes so that all the flavors are mixed well.
Kanji is also helpful in strengthening our immunity. South Indian Kanji is a complete nutritious diet. It can also be taken as breakfast, lunch or dinner.
