It can be frustrating when you are craving something delicious but cannot be bothered cooking, which is this chicken traybake is perfect for an easy dinner.

Jamie Oliver has shared his 'Hit n Run' chicken traybake, a recipe he designed for his cookbook 'Save with Jamie' to be an extremely affordable dinner.

This mouth-watering meal has tender chicken as well as a simple sauce to pack the vegetables with a rich flavour.

It only takes around five minutes to prepare before slowly roasting for an hour in the oven. Plus, it is also a very healthy dish as each serving is only 301 calories.

Jamie Oliver's 'simple' chicken traybake recipe Ingredients
  • Six chicken thighs
  • Four tomatoes
  • Two red onions
  • One red pepper
  • One yellow pepper
  • Four cloves of garlic
  • Half a bunch of fresh thyme
  • Two tablespoons of balsamic vinegar
  • One teaspoon of smoked paprika
  • Salt and pepper
  • Olive oil

  • Baking or roasting tray

Instructions

Preheat the oven to 180C or Gas Mark 4.

Cut the tomatoes into quarters and place them in the tray. Peel and cut the onions into large wedges, then deseed and chip up the peppers.

Add the prepared vegetables to the oven tray alongside the chicken thighs. Then, squash the unpeeled garlic cloves with your cutting knife and add them to the tray.

Scatter the thyme leaves over the tray and season with paprika. Add two tablespoons of the balsamic vinegar and then season with salt and pepper.

Toss everything together to make sure it is thoroughly coated, then spread evenly across the tray. Make sure the chicken is on top and not covered by any of the vegetables.

Roast in the oven for roughly one hour or until the chicken is golden brown, crispy and cooked through. Check on it while cooking to baste the chicken with the juices from the tray.

Once ready, your delicious tray bake is done. Jamie Oliver suggests serving with a "lovely" green salad, a crust loaf of bread or rice.
