Ingredients for Making Malpua
Wheat flour: 1 cup
Semolina: 2 tablespoons
Sugar: 1/2 cup (for batter) + 1 cup (for syrup)
Milk: 1 cup (or as needed for batter)
Cardamom powder: 1/2 teaspoon (to taste)
Fennel seeds: 1 teaspoon
Oil/ghee for frying
Water: 1 cup (for syrup)
Malpua Method


Prepare the Malpua batter.
In a large bowl, combine wheat flour, semolina, 1/2 cup sugar, cardamom powder, and fennel seeds.
Now, add milk little by little to form a thick and smooth batter. Be careful not to have lumps in the batter.
The consistency of the batter should be such that it pours easily from a spoon, neither too thin nor too thick.
Cover the batter and let it rest for at least 30 minutes. This will cause the semolina to swell and make the malpuas crispy.


Make the syrup
Heat 1 cup of sugar and 1 cup of water in a pan.
Cook until the sugar dissolves completely.
We don't want a stringy syrup; a slightly sticky syrup is sufficient. Set the syrup aside.


Fry the malpuas
Heat oil or ghee in a wide, deep pan.
When the ghee is medium hot, scoop the batter with a rounded spoon and slowly pour it into the hot ghee.
It will automatically form a round shape. Fry 3 to 4 malpuas at a time, depending on the space in the pan.
Fry the malpuas over medium heat until golden brown on both sides.
Dip in the syrup and serve.
Remove the fried malpuas from the oil and dip them in the lukewarm syrup for 5 to 10 minutes.
Then, remove the malpuas from the syrup.


Garnish the hot malpuas with chopped almonds, pistachios, or saffron.
