Often, cooked rice from the night before is left over in our homes. Many times we fry it and eat it the next day or are forced to throw it away. Rice parathas are so delicious in taste that even potato, cabbage and paneer parathas will seem pale in comparison to them. These are very crunchy from outside and very soft from inside. It is a perfect and healthy option for children’s school tiffin, morning breakfast or evening tea. This not only prevents wastage of food, but you also get a new dish. step 1: First of all, take the leftover rice from the night in a big mixing bowl. Mash them well with your hands or with the help of a potato masher so that there are no big lumps in them and they can be mixed easily into the flour.
Step 2: Now add wheat flour, gram flour, finely chopped onion, green chillies, ginger and lots of fresh coriander to this mashed rice.
Step 3: After this, add celery by rubbing it between the palms. Also add cumin, red chili powder, garam masala and salt as per taste.
Step 4: Mix everything well first without water. Rice already has a lot of moisture, so water will be required less. Now sprinkle water little by little and knead a soft dough. Apply a little oil on the dough, cover it and let it set for 10 minutes.
Step 5: After 10 minutes, break medium sized balls from the dough. Take a dough, apply some dry cotton wool on it and roll it into round, square or triangular shape as per your choice.
Step 6: Heat the pan on gas. Put the rolled paratha on hot pan. When it gets lightly cooked on one side, turn it over. Now apply oil, ghee or butter and bake on medium flame till it becomes golden and crispy from both the sides.
